Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a separate bowl, mix the mashed banana, coconut oil, and maple syrup until well combined.
Gradually add the wet mixture into the dry mixture and stir until you have a cookie dough consistency.
Fold in the chopped dried cranberries.
Use a spoon to drop spoonfuls of the cookie dough onto the prepared baking sheet.
Flatten the cookie dough slightly with the back of the spoon to your preferred thickness.
Bake in the preheated oven for 10-12 minutes, or until the edges start to turn golden brown.
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
