Easy Soft Cranberry Cookies

Ingredients
  

  • 1 cup Cassava Flour
  • ½ cup Mashed Ripe Banana
  • ¼ cup Coconut Oil melted
  • ¼ cup Pure Maple Syrup
  • ½ teaspoon Cinnamon
  • ½ teaspoon Cream of Tartar
  • ¼ teaspoon Baking Soda
  • ¼ cup Dried Cranberries finely chopped

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine all dry ingredients.
  • In a separate bowl, mix the mashed banana, coconut oil, and maple syrup until well combined.
  • Gradually add the wet mixture into the dry mixture and stir until you have a cookie dough consistency.
  • Fold in the chopped dried cranberries.
  • Use a spoon to drop spoonfuls of the cookie dough onto the prepared baking sheet.
  • Flatten the cookie dough slightly with the back of the spoon to your preferred thickness.
  • Bake in the preheated oven for 10-12 minutes, or until the edges start to turn golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
