Simple Wild Blueberry Spread

Ingredients
  

  • 2-2.5 cups wild blueberries
  • 1/2-2/3 cup coconut sugar
  • 2 tablespoons lemon juice freshly squeezed

Instructions
 

  • In a small saucepan, combine the frozen berries, coconut sugar, and fresh lemon juice.
  • Cook over medium heat for about 20 minutes or until the mixture thickens stirring frequently.
  • During the last five minutes, smashed the berries with a fork or potato masher for your desired thickness.
  • Taste and adjust sweetness or add more lemon juice if needed.
  • Remove from heat and let it cool to your liking.

Notes

This should provide enough delicious spread to complement 6-8 medium-sized pancakes.
